This is Scott's favorite protein bar & it is making its way to the top of my list! Try it out & let us know what you think!
Directions:
1. Preheat oven to 350 degrees.
2. Spray 9 X 13" Pyrex dish with non-stick spray.
3. Combine the first 11 ingredients & mix well.
4. Add the final 3 ingredients (4, if adding walnuts) & mix until incorporated.
5. Spread batter into the Pyrex dish & bake for 30 min.
Makes 24 squares.
Macros (without walnuts) - 1 square
Calories: 47
Fat: 0.7 g
Carbs: 8 g
Protein: 3.7 g
Macros (with walnuts) - 1 square
Calories: 63
Fat: 2.3 g
Carbs: 8 g
Protein: 4 g
He & She Tips: We highly recommend using the walnuts - we like the little "crunch" it gives! You MUST store these in the refrigerator or freezer as they will spoil because they have no preservatives!

ReplyDeleteYes Jenay, you can use Sucanat. Just keep in mind it will change the nutritional values of the bars and you will want to adjust your daily caloric intake accordingly.

I am new at clean eating and am confused by whey protein, I have some it says 100% whey protein but when you look at the ingredients there are like 15+ thing I can't pronounce, that doesn't seem clean to me....thank you soo much for your help and the time you put into this site!!!!

DeleteI just made these and they taste great! Mine were doughy and I was wondering if I baked them long enough. Are they supposed to have a cake texture or doughy texture? Either way, they taste great!
ReplyDeleteErin, it can go either way! Whitney and Scott like theirs a little gooey. Jim and I like ours a little more like a cake texture so we bake them a little longer.

DeleteMade these and was ridiculously happy with the results! The cake texture made me feel like I was getting a cheat. Going to try the lemon protein bars next. I've been eating clean for six months and this is a great addition to my meal plan. Definitely helps maintain my sanity when the mid-week craving hits!

I have an 11 year old who over the years has been anaphylactic to many allergens(Dairy, eggs, wheat, fish, peanuts, tree nuts). He is now only allergic to dairy and nuts, including peanuts. He CAN eat almonds! What are your suggestions for no whey or dairy for protein bars?

DeleteI have made this recipe 3 times with substituting the ideal brown no calorie sweetener with sucranat and adding a tablespoon of ground flaxseed. This is a wonderful snack. Tastes almost as sweet as my regular pumpkin bread make with sugar. I'm thinking of adding a mashed banana next time. Great recipe. Thanks
ReplyDeleteI made these and substituted pure maple sugar for the ideal brown; otherwise made them as written. OH MY! These were so good! Very cake-like and satisfying. I cut and wrapped individual servings and put them in the freezer. Will definitely be keeping these in my protein snack rotation!

ReplyDeleteI wanted to see how this recipe would work with coconut flour, so I tried it last night. I was worried that they would be too moist even after adjusting the number of egg whites and amount of almond milk added. I was delighted that they turned out great! I LOVE pumpkin pie, and these tasted just like a crustless pumpkin pie with less than 2 grams of fat per serving!

DeleteI plan on making these today, I just have a question about storing in the freezer. Do you just need to let them defrost by themselves or do you stick them in the oven or toaster oven? Thanks.
ReplyDeleteHi Michelle! It depends on how quickly you want to eat them. I have never had to microwave mine or put them in the oven. Try taking them out of the freezer & putting a serving in the refrigerator the night before so that they are ready to eat!

DeleteI made it 3 times with 4 cups quick cooking oats. I mixed it first into flour but my cake is still wet after baking on 180 European degrees which is 350 American. Any suggestions. O I use fresh pumpkin and 4 middle eggs whites.

It could be the protein powder you are using. I've only baked with MRM whey and MRM veggie! I've never had a problem with these bars! What brand are you using?
