Clean Eat Recipe :: Healthy Blueberry Banana Muffins


Looking for a quick and easy recipe for breakfast? These Banana Blueberry Muffins are the perfect compliment to your eggs or protein shake! You could even add protein powder (adjust the amount of liquid though!) to the muffin mix! The possibilities are endless. :-)

Clean Eat Recipe: Healthy Blueberry Banana Muffins

1 cup gluten free quick cooking oats
1/3 cup gluten free oat flour
3/4 cup liquid egg whites (or 4 egg whites)
1 tsp pure vanilla extract (avoid HFCS)
1/3 cup Stevia in the Raw
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
1 banana, mashed
1/2 cup frozen organic blueberries

1. Preheat oven to 350 degrees.
2. Mix all ingredients together except fruit.
3. Mash banana and add to mixture. Add frozen blueberries. Stir to combine.
4. Bake for 12-15 minutes.

Make 6 Muffins.

Calories: 122
Protein: 6 g
Carbs: 20 g
Fat: 2 g
Fiber: 3 g
Sugar: 4 g


  1. Hi I was wondering how I can pin this on pinterest due to the fact of their not being a pinterest button? Also do you have to use gluten free and quick cooking oats? I have read that if you process old fashioned oats that they become quick cooking but in all essence they also becomes oat flour second ingredient, So what to do?? Thanks for all your recipes!

    1. Hi! Thank you so much for your comment! :-) You should be able to install a pin it button on your browser so any website you go to you can pin their images! I was manually adding the pin it buttons on our images but haven't had a chance to do it on these yet. You should also be able to scroll over the image and see a pin it button in the corner!

      You could try that or just try it with the regular oats (without processing) you might just need a little bit more liquid! Let me know how it turns out!
