Gluten Free Power Granola


We just got back from a hiking trip to Yosemite National Park and before we left we made our own granola to take. It's much less expensive, you can control the ingredients, and it's very easy to make! The bad thing is that a lot of it didn't make it to the hikes - it seems as though someone ate a lot of it before we left and on the plane! My advice is to measure out servings into different baggies!

3 cups Gluten Free Rolled Oats
1/2 cup Organic Quinoa, uncooked
2 Tbsp Organic Flax Seed
3 Tbsp Organic Chia Seeds
2 tsp Cinnamon
1/2 tsp Sea Salt
1/3 cup Coconut Oil, melted
1/3 cup Coconut Nectar & Pure Maple Syrup Mix
1 tsp Pure Vanilla Extract (avoid HFCS)

1. Preheat oven to 300 degrees
2. Line baking sheet or pan with wax or parchment paper
3. Mix all dry ingredients together in a large bowl

4. Add wet ingredients to dry ingredient mixture and combine

5. Spoon out mixture onto lined baking sheet
6. Bake for 15-20 minutes. Stir granola and bake for an additional 15-20 minutes.
