Clean Eat Recipe :: Pumpkin Mashed Sweet Potatoes + Pacific Food's Tetra Pack Giveaway

With the holidays fast approaching, we wanted to share one of our FAVORITE new sweet potato recipes with you. It also helps add to the fall festivities with the added pumpkin! Say, "Bye Bye" to that nasty, calorie-laden sweet potato souffle recipe and "Hello" to this Carton Smart recipe!

Clean Pumpkin Mashed Sweet Potatoes Recipe


Pumpkin Mashed Sweet Potatoes

Ingredients: 
1 lb Sweet Potatoes, Baked with Skin Removed
2 c  Pacific Foods Organic Pumpkin Puree
1/4 c Raw Honey
1 1/2 tsp cinnamon
1/2 tsp nutmeg
Dash of Sea Salt
Stevia to garnish
Unsweetened Dried Cranberries to garnish


Directions:
1. Preheat oven to 350 degrees F.
2. Combine baked sweet potatoes, pumpkin puree, honey, cinnamon, nutmeg and salt with either a spoon (for chunkier texture) or in a blender/food processor (for smooth texture).
3. Place in oven safe dish and bake for 20 minutes.
4. Let cool for approximately 10 minutes.
5. Garnish with stevia and cranberries for a festive fall touch.

  5. I use chicken broth instead of water in savory meals- it adds an extra something :) I also will boil chicken breasts in the broth and then shred it, ready for lots of clean meals throughout the week.

  6. Baked Potato Soup. Bake potatoes with skins on, remove potato flesh, chop and add to soup. Save potato skins and cut into strips and toss with olive oil, salt and pepper. Bake until crunchy and use as a topping on the soup. Of course, use a Tetra-Pac broth for your soup and recycle the container!

  10. I've used their cartons of chicken stock in many recipes....from baked potato soup to my crock pot dishes...usually chicken breast, onion, carrots, kale and quinoa...that is a favorite, especially with varying spices.....such a yummy , healthy comfort food!

  12. I love pumpkin. One of my favorite meals is protein pumpkin oatmeal with oats, pumpkin, almond milk, cinnamon, pumpkin pie spice, a little stevia, and vanilla protein powder. It's delicious.   13. Our kids had already eaten dinner and my husband and I were in a pinch for dinner. We had a couple of cartons of Pacific's Poblano Pepper and Corn Chowder in our pantry and some leftover baked chicken in the fridge. We simply heated the Chowder on the stove and added the chicken - BAM, delicious, organic, high protein AND affordable solution to a quick dinner! We love our Pacific cartons!

  16. I make Turkey Tortilla Soup like this:
    3 cans of Rotel, 2 cans Mexicorn, 2 can black beans drained, 1/2 pkg taco seasoning, 2 cups leftover shredded turkey & a carton of chicken broth
    This uses cartons AND leftover holiday turkey to save waste!

  17. I’d make an easy and delicious breakfast for my family using Pacific Foods Organic Pumpkin Puree
    Pumpkin Chocolate Chips pancakes:
    2 cups baking mix,2 large eggs,1-1/4 cups milk,1/2 cup pumpkin puree, 1/3 cup mini-chocolate chips, 2 tbsp. sugar, 1/2 tsp. cinnamon.
    Whisk all the ingredients together and cook until the pancakes are golden brown
    And with the leftover puree I could make a smoothie or oatmeal the next day...

  21. I use cloth napkins to reduce waste -it also gives a formal feel to my dinner. We use washable dinner and service-ware and I love to used these cartons – they do taste fresher and I make multiple recipes so that nothing is wasted.My favorite for thanksgiving is the pumpkin puree in my pumpkin cheesecake recipe. truckredford(at)Gmail(dot)com

  24. I use Pacific Simply Stock Chicken in my soup recipe in the crock pot. I use two cartons of the stock, 3 cans cream of chicken soup, half a jar of Franks Red Hot, two tbsp of sour cream, shredded cheese and serve with cilantro on top! Its awesome! Especially if you like spicy!

    2 Cups frozen strawberries (1) 11.1 oz. carton Cocozia coconut water, 1 Tablespoon ground flax seed, 1-2 Teaspoons honey

  26. Use pumpkin puree cartons to make this recipe:
    Pumpkin pie croissants
    All you need is croissant rolls, pumpkin puree, sugar and cinnamon.
    Spread the pumpkin puree over each croissant, roll them up, sprinkle them with sugar and cinnamon and bake as directed
