Clean Eat Recipe :: Greek Chicken

This chicken has become one of our weekly staples!  We hope you enjoy it as much as we do!



Ingredients:
3 lbs boneless, skinless Chicken Breasts
1/2 cup of Greek Seasoning (make your own)
2 Tbsp of Coconut Oil

Optional Ingredient: Juice of 1 Lemon

Directions:
1. Preheat oven to 350 degrees
2. Cube chicken & place in olive oil coated large pyrex dish (we use an olive oil mister)
3. Melt coconut oil in microwave (approx 30 sec) & drizzle over cubed chicken
4. Sprinkle Greek seasoning over cubed chicken & squeeze lemon on top
5. Bake for approx 30-40 min until chicken is fully cooked (we recommend using a meat thermometer)

  2. What's the serving size?

    1. Typically chicken is 4oz per serving which yields about 22g protein, 1g fat, and 0g carbs. That would be around 100 calories. Add in the small amount of coconut oil for about 2-2.5g of saturated fat (MCTs). Thus, total marco profile is 3g fat, 0g carbs, 22g protein, so total calories are around 120g per 4oz serving of chicken. The raw measure is roughly the same as cooked measure.

  3. making this tonight for the first time. sounds so yummy. question though....do you cover with foil or bake uncovered?

  4. Made this tonight - super easy and delicious! We followed the recipe exactly, it looked just like the photo (minus the onions) and tasted fantastic.
