Clean Eat Recipe :: Honey Chipotle Ground Chicken

This has become one of our "go-to" recipes and is now a staple in our weekly food prep.  It's easy to prepare and throw together when you're in a hurry.  It's also a very versatile recipe - you can use it in a salad with guacamole, make tacos, add it to your scrambled eggs, or just mix it in with brown rice or quinoa!  We usually make 3 lbs of this a week!

Ingredients:
1 lb Ground Chicken Breast (our local Publix doesn't carry it, but they're always willing to throw packaged chicken breasts in the grinder while we shop)
1/2 cup Onion, chopped
1/2 Tomato, diced
1 tsp Cumin
1 tsp Chipotle Pepper Spice
1 tsp Oregano
Honey (drizzled over cooked meat - no more than 1 tsp)
Sea Salt & Pepper to taste

Directions:
1. Coat pan lightly with olive oil.
2. Place meat, onion, and garlic in pan, cook under medium-high heat until meat is cooked through.
3. Turn heat to medium, add in cumin, chipotle pepper spice, oregano, and diced tomato and continue to cook until all ingredients are mixed thoroughly. 
4. After meat is cooked, drizzle honey and mix into cooked meat.  Add sea salt and pepper to taste.

He & She Tip: Try combining Grass-Fed Beef with the Chicken for even more flavor.

  3. This looks so yummy!!! I can't wait to try it tomorrow :) I'm going to try it with turkey instead??? I'll let you know how it works out. I recently received an email from someone who raises their own chickens...free range, not corn fed, no antibioitcs or hormones. Gonna buy 15 and throw them in the freezer!! This should help with the food budget over the next several months!

I have made this four times in the past two days (twice for my fiance's family with small, diced chicken breasts, and two batches at his house for this week (one with the diced chicken breasts, and one with fresh, ground elk meat.) I can honestly say this will be a staple in our home for a long, LONG time. We've put it on lettuce, on spinach, on spaghetti squash (my FAVE!), and in a breakfast burrito this morning with kale, a scrambled egg, and a dollop of 0% fat organinc greek yogurt. SO. GOOD!!! People, if you need a go to meal, MAKE THIS! It's so good and SO EASY! Thank you so much for this recipe and for your website. They're both wonderful!

  9. Just made this for dinner and am eating it over spaghetti squash. It's so good! The chipotle pepper spice is really spicy - almost too spicy for me - but I still like it.
